About Little Millet

Little Millet is high in healthy fats in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It also has the smallest grains, so cooks faster than the other millets.

Little Millet is also called Same (in Kannada), Samai (in Tamil), Samalu (in Telugu) and Kutki (in Hindi)

Instructions
  1. Wash Little Millet Rice (one wash would be sufficient with millet procured from Kaulige Foods).
  2. Add 2 measures of water for every measure of Little Millet Rice.
  3. Cook the millet rice + water + salt in a pressure cooker. Reduce the flame after the first whistle. After the third whistle, take cooker off the flame and let it cool. Dont remove the pressure and let the millet cook in its own steam. It takes about 10 minutes for the cooker to cool.
  4. If there is still some water, dry it by putting the cooker on a low flame without lid.
  5. This can be used to prepare variety of dishes or can be used as replacement to rice.
