Egg Fried Rice using Little Millet Rice

About Little Millet

Little Millet is high in healthy fats in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It also has the smallest grains, so cooks faster than the other millets.

Little Millet is also called Same (in Kannada), Samai (in Tamil), Samalu (in Telugu) and Kutki (in Hindi)

Ingredients

Instructions
  1. Cook 1 cup of Little Millet Rice
  2. Remove clumps
  3. Chop all vegetables and keep it ready.
  4. Heat a wok and add 3 tbsp Olive oil. When oil is sufficiently hot add chopped garlic and green chillies. Careful not to burn them.
  5. Add Onions, Cabbage, Carrots, Beans, and Capsicum. Stir Fry in high heat. Vegetables should only half cook and maintain its crispiness.
  6. Beat eggs with salt and pepper and add it to the vegetables. Continue stirring. Add white pepper powder, salt, and red chilly powder and stir thoroughly
  7. Add Little Millet Rice and mix thoroughly. Add Soya Sauce & Vinegar and mix thoroughly. Add chopped Spring Onions and remove from flame
  8. Garnish with Coriander (based on preference). Serve Hot with Tomato and Chilli Sauce as accompaniments.
