Little Millet Pudina rice is a aroma-filled, mouth watering dish made Mint (Pudina) and Little Millet (same in Kannada).

Pudina, called Mint in english, is an ancient herb grown throughout the world. Apart from its characteristic taste and smell when added to food, Mint is also recognized for its health benefits. It is known for its blood cleansing properties in traditional medicine. Mint leaves also contain beta-carotines, that help diabetic patients.

Little millet rice, like any other millet, helps in controlling diabetes. It has been traditionally well known as a recovery food, recommended for pregnant women and recovering patients. The best thing about this little millet is that its taste, texture and appearance are similar to paddy rice. So it makes it easier to adapt for those who are new to millets.

About Little Millet

Little Millet is high in healthy fats in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It also has the smallest grains, so cooks faster than the other millets.

Little Millet is also called Same (in Kannada), Samai (in Tamil), Samalu (in Telugu) and Kutki (in Hindi)

Ingredients

Instructions
  1. Cook Little millet rice in a pressure cooker. Add 2 measure of water for every measure of Little millet rice in a pressure cooker. Add salt to taste and Bay Leaf and close the lid. Keep at medium flame for 1 whistle and low flame for second whistle (8-10 minutes). After the second whistle, take it off the flame and leave it aside for 10 minutes. Do not let off the cooker steam, let it cook further in its own steam. Once cooled, open the cooker lid
  2. Prepare mint chutney with minimum water. Chop all the vegetables.
  3. In a hot pan, take 1 tsp of oil. Add whole spices to it and fry for a minute.
  4. Add chopped Onion and fry till translucent. Add cashew nuts and fry for a minute
  5. Add chopped carrots and stir well.
  6. When carrot starts losing its color, add mint chutney. Cook the chutney till the raw taste of mint and coriander disappears. Add Salt to taste.
  7. Add the cooked Little Millet Rice and mix evenly. Remove from flame. Note: Millet rice has to cool otherwise it will become mushy.
  8. Serve hot with some raitha
