Millet Khichidi

Frying chopped carrots, capcicum and beans

Being very fond of khichidi, I decided to try the “Mixed Millet Khichidi Mix” sold online by Kaulige Foods in Bangalore. It is made from a mixture of Foxtail Millet, Little Millet, Kodo Millet, Jowar, Bajra and Proso Millet (along with green moong and some spices).

The instructions on the pack were very simple – just add 5 cups of water for every cup of khichidi and cook for 3 whistles. Although the mix itself contains a fair amount of spices, I added some extra veggies as well :)

The millet khichidi was super tasty, wholesome and filling. Super easy to cook and having so many nutrients, its a full package.

Instructions
  1. In a pan, heat 2 tbsp of oil. Once heated, add the chopped vegetables and cook for 5 minutes.
  2. In a pressure cooker, put 1 cup of the Khichidi Mix and 5 cups of water. Add the vegetables, close the lid and cook till you hear 3 whistles
  3. Once the pressure cooker cools, open and add salt to taste. Cook for 5 minutes and garnish with chopped coriander. Serve hot with curds.
