About Proso Millet

Proso Millet has the largest grain among the millet rices in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It is golden in colour, so it’s also called the golden Millet. Proso millet is a part of the staple diet of many cultures.

Proso Millet is called as Variga (in Telugu), Baragu (in Kannada), Pani Varagu (in Tamil) or Chena (in Hindi)

Ingredients

Instructions
  1. Grate Coconut. Chop green chillies.
  2. Soak Proso Millet Rice overnight.
  3. Drain the water and coarsely grind the rice along with grated coconut and salt in a mixie.
  4. Heat oil in a ladle and pour Mustard.
  5. Wait for the mustard to splutter, then add Curry Leaves, Chana Dal and Chopped Chillies. Fry for few minutes.
  6. Pour the ground batter onto a shallow bottomed vessel. Add the seasoning to the ground batter.
  7. Heat the batter on a low flame. Stir continuously.
  8. Batter will start becoming thick. Stir continuously.
  9. The batter becomes thick like a dough which can be shaped into balls.
  10. Shape the thickened batter into lemon sized balls with a small depression in the centre. Wet your hand so that the batter does not stick to your hand. Place these balls in a steam vessel or idly stand to be steamed for 10-12 minutes.
  11. Serve with chutney or any curry.
