Instructions
  1. If using the flax seeds, mix the flaxseed powder with 3 tbsps of warm water and keep aside for 15 minutes.
  2. Sieve both the flours and the baking powder together in one large mixing bowl
  3. Add a pinch of salt.
  4. Add the flax seed mixture or the whisked egg whichever one you are using and mix all the ingredients together.
  5. Gradually add water and mix till a dropping consistency is achieved. The batter should not be too thick or too watery. Since I personally do not use eggs, I make the pancake batter at night and keep it for the next morning’s breakfast. If using egg, the mixture should not be kept but used instantly.
  6. To make the pancakes, heat a skillet and grease it with very little oil.
  7. On medium heat, pour a ladleful of the batter to the skillet.
  8. Do not the spread the batter and allow it to spread out on its own.
  9. Cook on medium heat. Once the top side gets steamed and cooks, flip the pancake and cook on the other side.
  10. Remove from heat and spoon generous amounts of the home made cream cheese to your pancake, top it off with a green olive or sliced jalapeno and serve for a wholesome and yummy breakfast.
For homemade cream cheese topping
  1. Grate the paneer
  2. Add 3 tbsps of thick curd to this
  3. Finely grind the garlic cloves and green chilly to a paste
  4. Add this to the paneer – curd mixture
  5. Add salt as per taste
