During the holy month of Ramzan, Aash (Rice-Lentil Soup) is served at mosques for breaking the fast (iftar).  This traditional recipe has been prepared using Foxtail Millet Rice.

Instructions
  1. Chop all vegetables and keep it ready.
  2. Wash the millet+dal mixture.
  3. In 2 tsp of oil/ghee, fry the chopped onions. When the onions start losing their colour, add the green chillies.
  4. Add Ginger Garlic paste and fry for a few minutes.
  5. Add Tomatoes and fry till tomatoes become soft. Add salt at this stage so that tomatoes cook quicker.
  6. When the tomatoes are cooked, add Turmeric, Red Chilly powder and Garam masala and mix well. Cook only for a minute.
  7. Add chopped mint leaves. You can also add various vegetables at this stage. Fry for a few minutes.
  8. Add the washed Foxtail Millet, Dal, and minced Mutton and fry for 5 minutes.
  9. The water should evaporate and dal should fry well.
  10. Add 6-7 cups of water to this. Close the lid of the pressure cooker and cook for 3-4 whistles. After 4th whistle, take it off flame and let it cook in its own steam for about 15 minutes.
  11. Add more water and salt if needed and boil. Add Coriander leaves. Serve hot.
