The kesari baths of the local darshinis in Bangalore are something that I grew up on. Once in a while, I have this intense craving for something sweet, especially the Kesari Bath I have had since time immemorial.
One of those days, my craving for Kesari Bath and my liking for anything and everything made with Proso Millet compelled me to try out preparing Kesari bath using Proso Millet Rava and I can say for sure that this is one dish that everyone should try out.
This Proso Millet Kesari Baath is a healthy, modern classic.
About Proso Millet
Proso Millet has the largest grain among the millet rices in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It is golden in colour, so it’s also called the golden Millet. Proso millet is a part of the staple diet of many cultures.
Proso Millet is called as Variga (in Telugu), Baragu (in Kannada), Pani Varagu (in Tamil) or Chena (in Hindi)
- 1 cup Proso Millet Upma Rava
- 3/4 cup Sugar
- 10 Broken Cashewnuts
- Few Raisins
- 1/2 tsp Powdered Cardamom
- 3 strands Saffron
- 4 tbsp Ghee
- Heat ghee in a pan.
- Add the rava and roast for about 3-4 minutes making till a pleasant aroma rises.
- Heat water in a separate vessel and bring it to boil (Put 3 cups of water for every cup of rava)
- Add the boiling water, sugar and the saffron strands to the roasted rava and allow the mixture to cook on low flame for about 10 minutes.
- Once the mixture is cooked add in the roasted cashew nuts, raisins and cardamom powder and mix them in.
