This Sankranti, I prepared the traditional Sankranti dish – Khara Pongal using Foxtail Millet Rice. Navane Khara Pongal is simple, easy and tasty! Sweet Pongal is usually cooked to accompany this.
About Foxtail Millet
Foxtail is very rich in phosphorus and thiamin (Vitamin B1) in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc).
Foxtail Millet is also called Navane (in Kannada), Thenai (in Tamil), Korralu (in Telugu) and Kakum (in Hindi)
- 1/2 cup Foxtail Millet Rice
- 1/4 cup Moong dal
- 5-6 cups Water Adjust to change consistency
- 1-2 tsp Black Pepper Whole kernels
- 1 tsp Jeera (Cumin Seeds)
- 1 tsp Mustard Seeds
- 10 nos Curry Leaves
- 1-2 nos Green Chillies
- 1/4 cups Copra Pieces (Dried Coconut) Thin slices
- 3 tbsp Ghee
- Cook Foxtail Millet, Moong Dal, Pepper kernels and salt in a pressure cooker. 1 whistle in high flame and 2 whistle in low flame. Remove from flame and let the mix cook in its own steam.
- If the cooked mix is thick, you can add more water.
- Heat Ghee in a pan and add mustard seeds. After the mustard seeds have popped add jeera and curry leaves. Add Green chillies and copra pieces at the end. When the copra pieces turn golden brown, remove from fire and add it to the Pongal. Mix well and bring the pongal mix to a boil.
