Averkai season is for adding an Averakai twist to all the dishes! Mariyam’s creation of Averakai Roti using Kaulige Foods’ Multi Millet Roti Mix.
About Mixed Millet
This recipe contains more than one millet. Millets are good for you. More millets are better!- 3 cups Multi Millet Roti Mix
- 1 cup Finely chopped Onions Adjust quantity to suit taste
- 1 cup Finely chopped Coriander Leaves Adjust quantity to suit taste
- 1 cup Cooked Averkai Kernels Adjust quantity to suit taste
- 1 tsp Salt to taste
- 1-1/2 cup Water
- 1 to 2 nos Finely chopped Green Chilly
- 3 tbsp Oil/Ghee For Making Rotis
- 1/2 cup Roasted Peanuts
- 1/4 cup Freshly Grated Coconut Optional. Used it due to shortage of peanuts .
- 2 to 3 nos Green Chillies
- 1/2 cup Coriander Leaves
- 1 tbsp Tamrind Paste or Tamrind Whole
- 1 tsp Salt to taste
- Cook Averkai Kernels in pressure cooker with some salt and turmeric. Keep all ingredients ready.
- Mix all the ingredients with Kaulige Multi Millet Roti Mix and water. Add water little by little and mix the dough thoroughly. Add a tbsp of Ghee too.
- Make a smooth dough.
- Pinch a small or medium sized ball, flatten it and dust with some flour. You can use dough or ghee/oil so that the dough does not stick to your palm/rolling pin. Flatten the dough using rolling pin or palm. You can also place the dough in a zip pouch or between plastic sheet and press it using your palm.
- Gently remove the flat uncooked bread from the ziplock bag/plastic sheet and place it on a hot tava or flat pan. Cook on one side. Flip and cook the other side. flip a couple of times and cook til brown spots appear on both sides. apply some oil or ghee on top.
- Serve hot with some peanut chutney
- Preparing Peanut Chutney: Take all ingredients in a grinding jar. Add about 1/2 cup water and make into a fine paste. Add water to adjust consistency.
We used whole unpeeled kernels as it adds more fibre. Alternatively, peeled kernels can also be used.
