This  Bajra Dosa (Pearl Millet Dosa) is a brilliant dish to start the day with. The dosa comes out very crispy and tasty.

Of course, the face that it has Bajra instead of White rice makes it much healthier.

About Pearl Millet

Pearl millet has a high protien and high iron content in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It is well adapted to growing areas characterized by drought, low soil fertility, and high temperature.

Pearl Millet is also called bajra (in Hindi), Sajja (In telugu), Sajje (In Kannada) or Kanbu (In Tamil)

Instructions
  1. Wash the bajra and urad daal, then soak in water for 6-8 hours
  2. Add salt to taste and grind the mixture to a very fine, dosa batter consistency
  3. Allow the batter to ferment for 8 hours
  4. The batter is now ready to make. Pour gently on a heated, oiled tawa and remove when it becomes slightly brown.
