Experimented with Oregano & Basil herbs. Wholesome, healthy and tasty. I have prepared the diet version. Add cheese to complete the dish.
About Foxtail Millet
Foxtail is very rich in phosphorus and thiamin (Vitamin B1) in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc).
Foxtail Millet is also called Navane (in Kannada), Thenai (in Tamil), Korralu (in Telugu) and Kakum (in Hindi)
- 1 Cup Foxtail Millet Rice
- 2 Cups Water
- 1/2 Cup Chopped Onion
- 1/2 Cup Chopped Broccoli
- 1/2 Cup Chopped Mushroom
- 1/2 Cup Chopped Red/Purple Cabbage
- 2 tsp Flax Seeds Roasted
- 6 Cloves Garlic
- 2 nos Green Chillies Optional
- 1/2 tsp Chilly Flakes Optional
- 1/2 tsp Oregano Flakes Dry Herb
- 1 pinch Basil Dry Herb
- Salt to taste
- 1 tsp Oilve Oil extra virgin
- Parmesan cheese optional
- Chop all vegetables. Cook Foxtail millet Rice - 1 cup rice + 2 cups water in a pressure cooker. First whistle in medium flame and second whistle in low flame. After the second whistle, remove from flame. Do not remove steam. Leave it aside for about 10 minute and let the millet cook in its own steam. Once the pressure cooker cools (all steam is gone), transfer the rice into a plate and let the rice cool. This will retain graininess of the rice.
- Oregano and Basil dry herbs are needed.
- Toast the flax seeds and keep it aside.
- Heat a spoon of extra virgin Olive oil in a pan. Add chopped Garlic and fry for a few minutes. Do not burn the Garlic as it will give a different taste to the dish.
- Add chopped Onions and Green Chillies (You can also use Chilly flakes. If you are using Chilly flakes, add it after you add the rice).
- When Onions start losing color, add the rest of the vegetables except Red cabbage. Keep stirring the mixture. Fry till the veggies start becoming transparent. Note: Do not overcook the vegetables. They should have some crisp left in them.
- Add chopped Red Cabbage and stir for a minute or so. Again, dont overcook the Red Cabbage. They loose their color and crispiness.
- Add the cooked Foxtail Millet Rice. Add Flax Seeds, Oregano flakes (about 1/2 teaspoon) and couple of pinches of Basil. Add chilly flakes. Adjust the herbs and chillies as per taste. Add grated parmesan cheese and mix thoroughly. If Parmesan cheese is not available, use any processed cheese.
- Serve Hot. In this preparation, I have not added cheese.
