Proso Millet Rava Idli is a very easy to make nutritious breakfast. It is very filling and nutritious.
About Proso Millet
Proso Millet has the largest grain among the millet rices in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It is golden in colour, so it’s also called the golden Millet. Proso millet is a part of the staple diet of many cultures.
Proso Millet is called as Variga (in Telugu), Baragu (in Kannada), Pani Varagu (in Tamil) or Chena (in Hindi)
- Soak Urad dal in water for 4-6 hours. Drain out the water and grind it.
- To the batter, add one cup of Proso Millet Upma Rava, salt (less than one tsp) and allow it to ferment overnight.
- Pour out the batter into the Idli moulds and cook in idli cooker for 7-10 minutes.
- Serve with coconut chutney and sambar.
