About Little Millet

Little Millet is high in healthy fats in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). It also has the smallest grains, so cooks faster than the other millets.

Little Millet is also called Same (in Kannada), Samai (in Tamil), Samalu (in Telugu) and Kutki (in Hindi)

Instructions
  1. Dice & chop all the vegetables. Wash Little Millet rice (Tip: Use a sieve to drain water). You can also prepare this dish with Kodo Millet.
  2. Grate fresh coconut.
  3. Take 3 cups of water in a pressure cooker. Add all ingredients (Vegetables, Chillies & Rice). Add Salt to taste. Close the lid and cook for 1 whistle in medium flame and 2 whistles in low flame. After the third whistle, remove from flame. Do not remove the steam. Leave the cooker aside for 10 mins. Let the rice cook in its own steam.
  4. When cooker is sufficiently cooled, open the lid. Add grated coconut and mix all the ingredients. Note: Be gentle and dont mash everything. Serve hot with some raitha/sambar.
  5. Alternatively, you can season this with mustard seeds and curry leaves as per preference.
